Brussels and Sunchokes

INGREDIENTS

¾ lb. sunchokes aka Jerusalem Artichokes, sliced

¾ lb. brussels sprouts, sliced

¼ onion, sliced

3 garlic cloves, chopped

2 tbsp. coconut oil

½ cup vegetable broth

Juice from ½ lemon

Salt and pepper to taste

DIRECTIONS

In a sauté pan, over medium heat, melt coconut oil. Add onion and garlic and sauté for 3-4 minutes.

Add sunchokes, brussels sprouts, and vegetable broth and sauté for 10-15 minutes.

Cover and cook for another 5 minutes or until sunchokes and brussels sprouts are browned and tender. Add lemon juice.
